Kitchen Staff

With pristine beaches, a small harbour and numerous sailing, walking, and paddle boarding opportunities; St Mawes is one of the best places to live and work in Cornwall. The Watch House Restaurant is perfectly positioned on the harbour front and has worked hard to earn a reputation for wonderful service and brilliantly prepared food. With an abundance of local seafood on our doorstep, executive chef and owner Will Gould has created menus that centres around fresh fish and seasonal specialties.

We have a simple ethos, make the most of the fantastic fish and produce on our doorstep. We firmly believe the local seafood is of such a high quality that our menu should celebrate it not overshadow it. Our dishes are intentionally simple to allow the fish to be the star.To achieve this, we need chefs who, simply put, know how to cook fish.

We are currently looking for experienced, enthusiastic, motivated and committed chefs at all levels to join Will’s team. There are a number of seasonal and full time roles available for the right candidate and accommodation may be possible for full time team members.

As executive chef, Will is looking for people who are passionate about food. The restaurant is casual dining with simply prepared dishes crafted around locally sourced seafood and produce. While we aren’t aiming for a Michelin star, we have been included in their guide for the past four years and have earned a number of positive reviews in both local and national press. This is all a result of very high expectations in regards to the quality of the food and the skill in which it has been prepared. With over 10 years working as a Head Chef alongside some of the best chefs in London, Will is able to offer experience, training, and expert guidance to people just starting out in their career. We believe in advancement within our team and in the past have promoted waitresses to management roles and kitchen porters to more senior chef roles. For the more experienced chef’s, Will is looking forward to collaboration and fresh ideas that will keep The Watch House a top foodie destination.

This year our focus will be on expanding our reputation throughout Cornwall and potentially expanding the venture, so there is a lot of growth opportunity for the right people.

Front of House

Full and part time waiting and supervisor positions available for immediate start.

Set in the beautiful Cornish fishing village of St Mawes, The Watch House is looking for positive, pro-active and passionate individuals to join our team. Opening in 2013, we are a small independent harbour side restaurant that has built a solid reputation for excellent cooking, fantastic local fish and produce and friendly professional service.

We are looking for enthusiastic and energetic team members to join us with possibilities to develop, grow and for the right person an opportunity for promotion to assistant manager.

Experience is preferred but not essential as we will be offering full training, however candidates would ideally have some experience in a similar environment, a passion for great food, wine, beer and of course service, and be available to work throughout the busy summer months.
